Ratatouille Crepes

Remember that ratatouille we posted about? Well today, those leftovers found a new purpose – CREPES! Simple crepes with fresh thyme, ratatouille filling, topped with an egg sunny side up. Fresh fruit on the side.


Ratatouille takes its name from the French verb “touiller”, meaning “to stir up”; and that’s exactly what we did to some zucchini, summer squash, heirloom tomatoes, eggplant, bell pepper in a red wine sauce!
